Arroz con Salchichas Recipe 🌴

If you are from the Caribbean or grew up in Puerto Rico, you’ve had arroz con salchichas. This is a must if you are from there, so if you visit make sure to try it.
With my version, my husband says that I elevated the dish. I love this dish and we eat it very often, but the ingredients that you would normally use to make it may not seem that great.
I realized this when we started eating healthier due to dietary issues all of us were having. We had to start eating more organic foods and non-processed foods. Doing that helped us a lot, but I didn’t wanna give up the foods that I had grown up eating.
I switched some of the ingredients to make it healthier for my family. That‘s when my version of arroz con salchichas was born!

Sofrito:
Two onions
3 green bell peppers
2 garlic cloves
Cilantro one bunch
Green onions
1/2 can Roasted red bell peppers
Blend everything together in a food processor
Arroz:
4 cups rice
51/2 cups water
3 tablespoons sofrito
2 tablespoons tomato paste
1/2 green bell pepper cut is squares
1/2 red bell pepper cut in squares
Salt to taste
1 teaspoon better than bouillon chicken base
2 tablespoons Avocado oil
One packet Aidells chicken and apple sausage (salchichas)
Directions:
Simmer sofrito, tomato paste, salchichas in the Avocado oil for 1-2 minutes
Add water - bring to a boil
Add rice
Add salt
Add chicken base
Add bell peppers
When all the water is gone, bring to medium-low heat, stir and cover
Wait 20 minutes, open, stir and cover again
Wait 10 minutes
Enjoy!
*Note: I use a caldero to make the rice, you can use a regular non-stick pan with, make sure the lid seals well.
